arm64/config: remove unnecessary configs

QC case: 05726418:
QC suggest to disbale below configs on user build to improve performance:
1. CONFIG_DEBUG_STACK_USAGE
2. CONFIG_DEBUG_MEMORY_INIT
3. CONFIG_LOCKUP_DETECTOR

however, CONFIG_SOFTLOCKUP_DETECTOR need disbale, or CONFIG_LOCKUP_DETECTOR will
auto selected.
